Dead Fish Beach was recorded on location in an Indian dance studio, Webb St, Wellington, New Zealand during December 2000. Recording engineer Andrew Downes tracked the album using Tascam DA machines through a Mackie 8 bus desk. Darren Mathiassen (drums, percussion) and Tim Robertson (bass) spent a week recording nine rhythm tracks live with Charlotte, who overdubbed her Fender Telecaster parts using a Sansamp and tremolo pedal. Charlotte's vocals were recorded in the Ladies Changing Rooms of the dance studio, where Conrad Phillips provided backing vocals.

Additional musicians included Alan Norman who played accordion on Remember, and Bob Smith who played organ on Lay Me Down and Religion. The then extremely pregnant Janet Holborow played cello on Skin and Steve Roche played trumpet on Lay Me Down.

Additional recording was done at Marmalade Audio @ Studio in January 2001 including three solo nylon and steel string acoustic guitar tracks. Andrew Downes also mixed the album in @. Martyn Alexander mastered Dead Fish Beach at York St Studio, Auckland in March 2001.
